who is the old man, “Napkinstilskin”?

Very Sid and Marty Croft.

When I was a kid, I remember McDonaldland and its characters being a much bigger thing, and then gradually it dwindled down to a few characters before basically disappearing, more or less. I had no idea why this happened, but it turns out that the reason for this was PRECISELY that this Universe of McDonalds characters was a little TOO “Sid and Marty Krofft.”

The old man is The Professor… who I believe represented chicken McNuggets.

Looking at the wiki, The Professor rarely spoke and just invented things. Doesn’t actually look like he represented anything. 
Speaking of Sid & Marty Kroft… did you know they sued McDonalds? Yep.
